Ingredients
- 1 package Spicy Asian Marinated Chicken Thighs
- 2 heads of Green leaf lettuce or 3 heads Romaine, chopped
- Vinaigrette (recipe below)
- 2 cups shredded red cabbage
- 1 ½ cups crispy wonton strips
- 1 cup mandarin oranges
- 1 cup roasted cashews
- 1 cup matchstick carrots (or 1 large carrot shredded)
- 1 red bell pepper, thinly sliced
- 1 avocado, sliced
For the Vinaigrette
- 3 tablespoons olive oil
- 3 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1 1/2 teaspoons honey
- 1 teaspoon soy sauce
- ¼ teaspoon granulated garlic
- 1 tablespoon sesame seeds
Preparation
- Cook chicken thighs as desired (i.e. saute, bake, or grill) according to package directions and slice.
- Divide lettuce between four bowls and top with red cabbage, wonton strips, mandarin oranges, cashews, carrots, pepper, and avocado. Drizzle with vinaigrette.
- Vigorously whisk all ingredients in a small bowl (or shake ingredients together in a covered mason jar).
